Natto Soba noodle ☆

Natto Soba Noodles (good for gut health ☆)

Cook Time: less than 10 min
Serves: 1

Ingredients

  • 1 bundles soba noodles

  • 1 pack natto (fermented soybeans)

  • 1 ripe avocado, sliced

  • 1 beef sausage

  • 2 tbsp soy sauce (adjust to taste)

  • 2 tsp sesame oil

  • 1 tsp umami seasoning powder (such as mushroom powder or dashi)

  • 1 tbsp chicken stock (optional, is to loosen sauce)

  • Seaweed flakes (aonori or shredded nori), for garnish

  • Toasted sesame seeds (optional)

(the side dishes are shrimp tempura, miso soup and yakgwa (Korean dessert)

Instructions

  1. Cook the soba noodles:
    Bring a pot of water to a boil. Add soba noodles and cook according to package instructions (usually 5–6 minutes). Drain and rinse under cold water to remove excess starch. Set aside.

  2. Prepare the sausage:
    In a small skillet, pan-fry the sliced beef sausage until browned and slightly crispy.

  3. Make the seasoning sauce:
    In a small bowl, mix together the soy sauce, sesame oil, and umami powder. Add a tablespoon of chicken stock ( optional last step)

  4. Combine the noodles and natto:
    In a large mixing bowl, toss the cooled soba noodles with the pack of natto (including its sauce and mustard if provided). Pour in the sesame oil soy mixture.

  5. Assemble the bowl:
    Top with slices of avocado, crispy sausage, and sprinkle seaweed flakes. Add sesame seeds or chili oil if desired.

  6. Serve immediately:
    Enjoy cold or at room temperature for a refreshing and savory meal. ☆
