OMURICE Fried Rice

A Japanese comfort classic — stir-fried rice packed with spam and veggies, topped with butter egg omelette, and finished with a drizzle of ketchup.

Prep Time: 10 min

Cook Time: 10-15 min
Serves: 1-2

Ingredients

For the Fried Rice:

  • 2 cups cooked white rice (preferably day-old or cold)

  • 1/2 cup diced spam

  • 2 tbsp onion bits (finely chopped)

  • 1-2 tbsp diced paprika (any color)

  • 1-2 tbsp diced carrot

  • 2 tbsp olive oil

  • 1 -2 tbsp oyster sauce (adjust to taste)

For the Omelette:

  • 3 whisked eggs

  • 1 tbsp butter

  • Pinch of salt

For Garnish:

  • Ketchup, for drizzling

Instructions

1. Make the Fried Rice:

  • Heat olive oil in a non-stick pan over medium heat.

  • Add diced spam and cook until slightly crispy and golden.

  • Toss in onion, carrot, and paprika bits. Sauté for 2–3 minutes until softened.

  • Add the cooked rice, breaking up any clumps with your spatula.

  • Stir in oyster sauce and mix well to coat everything evenly. Taste and adjust seasoning if needed.

  • Once heated through, transfer the rice to a bowl and gently shape into a mound on a plate.

2. Making the Butter Egg Omelette:

  • In a bowl, beat the eggs with a pinch of salt and 2-3 tbsp water.

  • Heat butter in a non-stick skillet over medium-low heat.

  • Pour in the eggs and gently stir with chopsticks or a spatula in small circles to create soft folds. When the eggs are half-cooked (still slightly runny on top), stop stirring.

  • Let the bottom set slightly, then gently slide or fold the omelette over the rice mound.

3. Finish & Serve:

  • Drizzle ketchup over the top

  • Optional: sprinkle chopped parsley or scallions on top.
