OMURICE Fried Rice
A Japanese comfort classic — stir-fried rice packed with spam and veggies, topped with butter egg omelette, and finished with a drizzle of ketchup.

Ingredients
For the Fried Rice:
2 cups cooked white rice (preferably day-old or cold)
1/2 cup diced spam
2 tbsp onion bits (finely chopped)
1-2 tbsp diced paprika (any color)
1-2 tbsp diced carrot
2 tbsp olive oil
1 -2 tbsp oyster sauce (adjust to taste)
For the Omelette:
3 whisked eggs
1 tbsp butter
Pinch of salt
For Garnish:
Ketchup, for drizzling
Instructions
1. Make the Fried Rice:
Heat olive oil in a non-stick pan over medium heat.
Add diced spam and cook until slightly crispy and golden.
Toss in onion, carrot, and paprika bits. Sauté for 2–3 minutes until softened.
Add the cooked rice, breaking up any clumps with your spatula.
Stir in oyster sauce and mix well to coat everything evenly. Taste and adjust seasoning if needed.
Once heated through, transfer the rice to a bowl and gently shape into a mound on a plate.
2. Making the Butter Egg Omelette:
In a bowl, beat the eggs with a pinch of salt and 2-3 tbsp water.
Heat butter in a non-stick skillet over medium-low heat.
Pour in the eggs and gently stir with chopsticks or a spatula in small circles to create soft folds. When the eggs are half-cooked (still slightly runny on top), stop stirring.
Let the bottom set slightly, then gently slide or fold the omelette over the rice mound.
3. Finish & Serve:
Drizzle ketchup over the top
Optional: sprinkle chopped parsley or scallions on top.
