Special Creamy Instant Ramen ☆

Inspired by Japanese ramen hacks, this recipe turns a simple instant ramen pack into a bowl of creamy, umami-packed comfort food.

Ingredients used:

  • 1 pack instant ramen (any flavor, but I am using Jin ramen)

  • 1 egg yolk

  • 1-2 tbsp Kewpie mayo (Japanese mayonnaise)

  • 1 tsp chicken stock powder or concentrate (or substitute 1/4 cup prepared broth)

  • 1 1/4 cups water (adjust slightly based on how saucy/soupy you want)

  • Peeled Shrimp + boiled egg

  • Optional toppings: chopped scallions, chili oil, sesame seeds, and seaweed

Instructions

  1. Boil the noodles:
    In a small pot, boil water and add the instant noodles - cook according to the package instructions (usually 3–4 minutes).
    (Do not add the seasoning packet yet!)

  2. Make the creamy base:
    While the noodles cook, in your serving bowl combine:

    • 1 egg yolk

    • 1 -2 tbsp Kewpie mayo

    • Ramen seasoning packet

    • 1 tsp chicken stock powder (or 2 tbsp hot chicken broth)

    Mix everything together into a smooth paste.

  3. Combine:
    When noodles are cooked, turn off the heat. Pour the hot cooking water (broth) into the bowl with the mayo/egg mixture while stirring to temper the egg yolk and melt everything into a creamy soup.

  4. Add the noodles:
    Add the cooked noodles to the bowl and stir well in the creamy broth.

  5. Add your Protein:

    Add the boiled or fried eggs and boiled shrimp in the bowl.

  6. Top & Serve:
    Garnish with your favorite toppings: scallions, chili flakes or oil, sesame seeds, nori, or even more kewpie mayo !
